Until now, pancakes just haven’t gotten the respect they deserve in the breakfast pantheon, while eggs long ago went uptown with omelettes and benedicts. Even waffles got a Belgian makeover. But Orange is making the lowly pancake an art form, with a degustation offering that changes weekly, and pairs pancakes with a range of treatments most unlikely, such as the recent “hippies” theme, which included “bud”—mint pancakes garnished with mint honey and “green” butter, tie dye—a “multicolor party” of sweet and tart syrups, and two similarly offbeat selections. Some offerings are better than others, but portions are individually modest and when it works, it’s a bit of pancake heaven.
