We`re not sure how we feel about the latest version of one-brunchmanship, the do-it-yourself buffet of mixes, garnishments and hot sauces that`s fast becoming a staple of Sunday afternoons with the Bears at the bar. After all, we patronize our brunch spots in search of something better than we can muster up at home. Yet the variety of offerings, which is getting insanely expansive at some spots, incorporating meats and cheeses and pickled vegetables, does make for an opportunity for some tasty chemistry experiments. But like all science labs, trial and error are the order of the day, which can get expensive at seven bucks or so a pop. The Rail, a friendly neighborhood sports bar near Lincoln Square, offers an all-you-can-drink option for $7.50 on Sundays and claims sixty different ingredients. At least half appear to be hot sauces but no matter, there`s still more permutations to try than any stomach can abide. But remember: a football game tends to run three hours or so, so pace yourself lest you get sent to the locker room early.
